Tonka Bean Infusion

The Tonka Bean is the seed of a plant from South America. It has a pleasant and relaxing scent, sweet, camphorated and reminiscent of Vanilla. It is a very intense flavored spice and should be used sparingly.
The Tonka bean spray can be used a lot with desserts on dry cakes, biscuits, cream, custard and goes well with all chocolate products included in the hot chocolate drink and in summer on ice creams and sorbets. In luxury gastronomy it goes well with fish or meat dishes. In addition, in cocktails, especially those based on Gin, it gives a touch of class.
