Finocchietto (Fennel)
In August, bundles of wild fennel are harvested on Mount Epomeo still in bloom. The cleaning and selection of the flowers and seeds of the plant takes place with great care. Everything is infused in kosher alcohol for a few weeks, filtered, and placed in steel drums to decant before being mixed with water and sugar. Fennel is our must and is widely used as a digestive also correcting sparkling soft drinks such as Sanbitter, Tonic Water, and even just a glass of sparkling water.
