Muntok White Pepper Infusion

Muntok pepper is grown at Bangka, an Indonesian island near Sumatra. It comes from the same plant as black and green pepper but the whiteness is given by the times of harvest and by the different ripening and subsequent processing.

Muntok pepper has a strong, austere, cold flavor with a slight hint sweet aftertaste and aromas of eucalyptus and hay. Over time it takes a musky, decidedly animal smell. Pepper is used in each dish but more in light dishes. It is excellent with cheeses and also gives a character to spirits.
