Piperna d'Ischia Infusion

Piperna is a wild thyme that grows in Ischia. It has a bitter and spicy taste and is very suitable for use with dishes of white and red meats in fact it is used to prepare the "Coniglio all'Ischitana" which is a typical rabbit dish in Ischia.

Today it is also widely used in the preparation of thirst-quenching drinks and in cocktails. Afew sprays in the salad and on grilled vegetables are magnificent.
